Slow Cooker Curry Chickpeas and Vegetables

This crockpot chickpea curry is seriuosly comforting and delicious. On a cold night, it will warm you up from the inside out. It's one of our favorite vegetarian curries along with this Cauliflower and Potato Curry . Did you know that eating meatless meals is better for not only your health but also the health of the planet? Do you already subscribe to eating meatless meals once in a while? Maybe you are a vegetarian or you just enjoy a meatless Monday now and then. Whatever your eating philosophy, I can tell you that this vegetarian dish is my go-to as far as curry meals are concerned. And I know I'm not alone. Curry seems to be a popular dish for many vegetarians and for good reason. It's packed with flavor and makes almost any legume or veggie taste delicious. It also is a meal that many times is meant to be served without meat, which can be a nice variation to constantly looking for ways to substitute veggies for meat in recipes. Slow Cooker Balsamic Brown Sugar Pork Tenderloin

Slow Cooker Balsamic Brown Sugar Pork Tenderloin couldn't be easier to make and is a dish you will want to eat over and over again. It's sweet, savory, and good enough to serve to company on a special occasion. Serve it with some  Crispy Balsamic Brussels Sprouts  or Mashed Cauliflower. In case you haven’t noticed, I am obsessed with balsamic glaze these days. I am putting it on everything. Salads, sandwiches, pizzas, and now pork. Usually I make my own by simply reducing some balsamic vinegar but you can also buy it on  Amazon  or Trader Joe’s has a great one. So predictably, I made this delicious slow cooker balsamic brown sugar pork tenderloin last week and had to trash it up with some glaze. With or without the added glaze, the pork comes out deliciously tender. It is a bit sweet and tangy from the combination of vinegar and brown sugar. Honey would work great as well. I decided to hold back on the herbs this time around but thyme, rosemary, or sage would all be deliciou

This Slow Cooker Teriyaki Chicken is covered in a healthier homemade sauce and cooked in the crockpot until it is tender and juicy and delicious. My whole family goes crazy for it. Serve it with H ealthy Fried Rice or  Asian Zucchini Noodles  for a take-out style meal at home. You know that teriyaki chicken in the mall food court that's almost impossible to resist, lately I have had a serious craving for that. However, I am always wary of ordering it after watching just how much oil the cooks squirt onto the cooking top. So I have been experimenting with making different versions at home and this slow cooker one turned out amazing. The chicken comes out tender, the sauce is sweet and savory, and the quickly cooked veggies make it a complete meal.  The other thing I love about this meal is that it is fantastic for meal prep and leftovers. Trust me when I say you will want to make a double batch. Normally we eat it with veggies and rice the first night. Then I will serve it as l

These simple oat pancakes packed with fresh strawberries and bananas are the perfect healthy and filling breakfast! They are favorites for us along with these Banana and Egg Pancakes and Flaxseed Pancakes . Everyone loves pancakes but they're often not the healthiest breakfast choice. Made with white flour, sugar, and butter, not to mention all the toppings — maple-flavored sugar water "syrup," more butter, jellies and jams, whipped cream, Nutella, or chocolate chips, sometimes I feel like I might as well just feed my family doughnuts. Spinach and Mushroom Lo Mein that is packed with flavor makes the best meatless meal or side dish. Make it as spicy as you like and add chicken or tofu if desired.  As a kid, my mom and I used to both race to the fridge to get the last bit of leftover lo mein any time we got Chinese food. The weird thing is though, we were racing to the fridge the morning after, wanting the leftover lo mein for breakfast. My whole family loves leftovers for breakfast so this was no surprise, but since we only got Chinese food every once in a while, lo mein was a prized leftover. Thinking about those memories over the weekend, and thinking about the amount of calories a serving of lo mein can have (up to 900!) I decided it was time to make my own homemade, healthier lo mein.
