Easy Fish Tacos with Lime Slaw

Nothing is better than these Mexican Fish Tacos with creamy lime slaw and avocado. They take less than 30 minutes and are so so good. Make them for your next Taco Tuesday and consider trying these Grilled Chicken Tacos and Steak Tacos as well. Even when nothing is working out right in my day, I know at the very least I have a few dependable, tasty recipes I can count on to make an easy, delicious dinner. One such recipe in my arsenal are these Fish Tacos with Cabbage Slaw. With just a little kick of spice from the ancho and jalapeno, crunch from the slaw, and a nice, warm, melt-in-your mouth tortilla to hold it all together, I think you'll agree. Since I never know when my day is going to need rescuing by dinner time, I always make sure to have some cod or other meaty white fish in the freezer. Fish thaws quickly, so that's not something I really have to take into account if I decide to make these tacos ahead of time (like, say, chicken or beef). And, if I'm really stu

Asian Meatballs

These Asian Beef Meatballs are packed with flavor and work for so many different dinners. Serve them with fried rice , Asian Noodle Salad , or  Healthy Chow Mein . Ever have one of those days where it just feels like everything is going wrong? You know those days when your hair just won't work out right, you spill coffee all over yourself, your phone dies in the middle of the afternoon with no charger in site, and on and on? Well, I had one of those days recently. I won’t bore you with all the details, except, okay just one more; it’s part of the story, I promise. After all of these things happened right in a row, I tried to find a way to relax and de-stress. So, I decided to walk to the grocery store about a mile from my apartment to buy chipotles to make these Chipotle Meatballs , one of my favorite meals. (Yes, food definitely always cheers me up.) Except — get this — they were out of chipotles. Ugh! Usually, I feel like no one buys them but me! The cans are typically dusty,

Mexican Shrimp Skillet

This easy Mexican Shrimp Skillet will be your new favorite weeknight dinner. With seasoned shrimp, black beans, corn, and tomatoes - this recipe is filling, hearty, and healthy. It's a favorite shrimp recipe around here along with these  Blackened Shrimp and Shrimp Fajitas .  With summer on the horizon, I have simple and easy meals on the brain and this Mexican Shrimp dish fits the bill perfectly. From start to finish, it's ready in just 15 minutes and it's a meal that everyone loves. Plus with so many different ways to serve it and delicious leftovers, it's a meal you can repurpose all week.  To really pack in the flavor in this dish, I love to start with sauteed onions, poblano peppers, and garlic. This creates a super flavorful base with just the right amount of spice from the poblano peppers. Next comes the shrimp. Cooking it with the onions and peppers ensures it will have tons of flavor as well. Then to keep things really easy, I used taco seasoning as the ne

It's packed with thinly sliced sirloin, bok choy, and mushrooms in a savory stir fry sauce. Serve it with some Healthy Fried Rice or Healthy Chow Mein for the perfect Chinese takeout inspired meal. Do you ever have nights where you can't seem to find even 30 minutes of time to get dinner on the table? Who am I kidding, that feels like basically every night of my life. Some days just bleed from morning to afternoon to night without my even thinking about it and before you know it, it's time to get dinner started and by the time I realize it, I always seem to find myself with less than 30 minutes to get dinner on the table. So typically I'm left running around while everyone stares at me, ravenous for dinner while I end up staring into the fridge thinking about what I can make in the shortest time possible. The answer? Usually stir-fry! In

Grilled Yellow Squash

If you aren't grilling summer squash, it's time to start. This versatile vegetable comes out sweet, smoky, and delicious on the grill. Throw it on the grill with some grilled zucchini , grilled eggplant , or grilled onions for a delicious grilled vegetable feast. It's almost a given that every summer, the requests for yellow squash and zucchini begin to pour in. Everyone seems to have a garden or neighbor's garden that is overflowing with this tasty summer vegetable. And while you can definitely use it for more complicated recipes, the first thing I am doing is throwing it on the grill. It is such a yummy side dish along with something like this Pesto Chicken or Grilled Salmon . Then we get to the leftovers, my favorite part. There are literally hundreds of ways to use leftover grilled summer squash. Throw it in your morning eggs, make a delicious grilled veggie sandwich with feta and olive spread, toss it into a pasta salad, make a quinoa bowl with grilled squash

Low Carb and Paleo Kung Pao Chicken

This healthy, low carb, and Paleo-friendly Kung Pao Chicken is ready in under 20 minutes and tastes way better than takeout. Serve it with Cauliflower Fried Rice or Sesame Edamame . Are you a stress eater? Do you have stress foods? If so, you are not alone. For me, when I'm stressed out (or tired or both) I tend to crave greasy, take-out Chinese food. It's been a "thing" for as long as I can remember. I blame it on my college years when late-night papers and study sessions led to even later night Chinese food takeout calls (hey, I figured I had to nourish my brain somehow to keep it retaining all that information). For some, it was pizza but for me, it was Chinese takeout all the way. Back then my metabolism made quick work of these late-night meals (do you miss those days as much as I do?), but these days I need something healthier to satisfy my cravings for unhealthy foods. Luckily, it's pretty easy to make healthier, delicious versions of lots of take-out m

Creamy Garlic Mushroom Chicken

You'll never believe this Creamy Garlic Mushroom Chicken comes together in less than 20 minutes and is a healthier version of a normally heavy dish. Serve it over some creamy spinach polenta or with some crispy  baked broccoli . Growing up my Dad cooked exactly two dishes — the most amazing egg sandwiches, (which now are our favorite late-night food whenever we are visiting home) and the most delicious, buttery mushrooms that he would cook up in a cast iron skillet. My sister and I would fight over who got to eat them, and between the three of us, we could kill a few pounds of mushrooms in one sitting, easy. To tell you the truth, I am getting hungry just thinking about them. Seriously — you have never tasted a mushroom so good in your entire life. I'm pretty sure his mushrooms are what made me love mushrooms as much as I do today. The only problem though is that my husband hates them. Therefore, I rarely incorporate them into dishes, which is a huge bummer. However, las

Shrimp Fried Rice with Asparagus

This quick and easy Shrimp Fried Rice tastes better than takeout and is so much better for you. With a touch of spice and crunchy asparagus, you'll love this easy Chinese recipe. Chinese food lovers don't want to miss this  Healthy Fried Rice ,  Healthy Chow Mein , or Healthy Kung Pao Chicken as well. If you have been here for a while, you know that I love making over restaurant and takeout favorites at home.  I love to find a way to make these dishes healthier, easy to make, and delicious. We don't sacrifice on flavor here. Lately, I have been all about making over my favorite Chinese takeout dishes at home. I've made a Healthy Mongolian Beef , Moo Shu Beef , Soy Chicken and Vegetables ,   General Tso's Chicken , and even a super healthy Egg Roll Bowl . As I continue to make my way through my a Chinese takeout menu, Shrimp Fried Rice was definitely next on the list. In our house, there is always a fight about whether to order shrimp and pork fried rice, and I

White Bean Pizza Burgers

Pizza style white bean veggie burgers topped with peppers, onions, marinara sauce, and mozzarella cheese are seriously delicious. These filling and healthy burgers will quickly become a favorite. Serve them with Parmesan Zucchini Fries or  Healthy Kale Caesar Salad . Veggie burgers get a bad rap. Sure, there are good versions and bad versions — just like any other burgers out there, veggie or otherwise. But if you ever had a good veggie burger, then you know what I'm talking about. They can be just as flavorful, "meaty" and satisfying as their animal counterparts. I have spent a lot of time perfecting the veggie burger , so I know what I'm talking about. Plus, there are so many ways to patty-up veggies that surely there's a version out there that even the most self-professed-beef-burger-loving foodie can have his or her mind changed. It's all a matter of trying a few till you come across just the right flavor and texture combination. I love a lot of diffe

Easy Grilled Onions

Learn how to grill onions so that they come out perfectly charred and caramelized every time. These will be a huge hit for dinner and can be used in so many ways. You'll also want to try this easy Grilled Asparagus and Grilled Zucchini . There is almost nothing I love more than tender, sweet grilled onions. Throw them on top of burgers, add them to salads, use them as a side dish, they are so good. And for people who don't like raw onions, this is something completely different. When you grill an onion, it loses that sharp bite and gets sweet and delicious. You have to try them.  Now that summer is here, you can be sure that I am outside using the grill at least 3 nights a week. Since we don't have air conditioning, it's a great way to avoid heating up our house even more. Plus every time I go outside to grill, you can be sure that I am throwing a couple of onions on the grill as well. They are one the best on the grill and super versatile. Use them for burgers, tac
