Slow Cooker Madras Curry Lentils with hearty lentils, potatoes, and spinach all cooked in coconut milk and Indian spices is a warm, comforting dish that you will make again and again. As much as I love to cook, I can't possibly cook all my meals, all the time (well, I mean, I could I suppose but then I'd honestly do nothing else). I've been known to eat out from time to time, of course. And, I also like to eat store-bought, pre-made meals as well. I am picky about the ones I choose though, and I try to find meals made with as many real ingredients and as little of the processed stuff as possible. All that being said, the inspiration for today's recipe came from one of my favorite store-bought lunches: Tasty Bite Madras Lentils . They are an Indian lentil dish made with a curry of tomatoes, coconut milk, and spices. The classic Wedge Salad made healthier with a lightened-up homemade blue cheese dressing made with Stonyfield Yogurt . This post is brought to you by Stonyfield but all opinions are 100% mine. There are two types of salads in the world - the ones that are actually good for you and the ones are seriously indulgent and just happen to have some vegetables. What's that you say? Creamy coconut basil sauce spiked with lime and a touch of spice? I think I'm in love. Given my deep and unabiding obsession with the mixture of basil and coconut, I would (and do!) eat this sauce on almost anything — noodles, brown rice, quinoa, veggies, and especially this slow cooker chicken breast. Why? Well, for starters, the flavors in the sauce deepen as they cook and chicken just happens to be the perfect vehicle to absorb and capture all that flavor. Plus, there is only about 10 minutes of prep time on your part and then all the actual magic happens in the slow cooker, while you're off doing other fun things. How can I customize this Crockpot Coconut Basil Chicken? Depending on your preferences, there are a few tweaks you can make to the sauce to make it exactly what your craving. If you love Thai curry, consider adding some green curry paste. If you like a sweeter sauce, add some brown sugar or honey. Love cilantro? Add some fresh cil

Show of hands: How many of you live with a hardcore meat eater? Yeah, I didn't think I was alone in this. Lately I have been trying to incorporate more vegetarian and vegan meals into our rotation. But, as you can imagine, I have a problem when it comes to the carnivore I live with. Even if I bulk up vegetarian meals with pasta or grains, I still usually get a sideways stare and slew of questions around whether or not this is all we are eating?!
