This healthy Slow Cooker Sausage and Peppers in Tomato Sauce is the perfect Italian Meal and with only 215 calories per serving, it's a meal you can feel good about. A couple of weeks ago, the local beach fire pits opened up for the season and we had the best beach picnic with friends. Well, it's official — the cold weather is here to stay for a few months anyway. When that happens, I go on the hunt for great soup recipes. I'm always keeping a lookout for any warm, hearty, nutritious soup to warm us up from the inside out. I've also found that they are the perfect thing to have in the freezer when I want a snack or a quick warm meal. And it nearly always hits the spot. Normally at the beginning of the month, I like to pick a few soups to make in bulk that I can freeze in individual portions and then grab them at a moment’s notice. This month, I made a big batch of zero-point veggie soup and this delicious creamy mushroom soup. The best part? You'll never believe it is only 3 points a serving! Cilantro Lime Quinoa

Easy quinoa with the flavors or cilantro and lime is my new favorite thing to make as a Mexican side dish or as the base for burrito bowls. The lime and cilantro add so much flavor to the quinoa and will have you going back for more. Serve it with some Baked Chicken Fajitas or Grilled Chicken Tacos . When I first moved to Los Angeles, Chipotle was the new kid on the block and my old roommate and I were more than happy to make it a regular part of our routine. We would venture over after a particularly long school day, split a burrito and a bag of chips with their infamous guacamole, and sometimes have a beer depending on how hard the day had been. Being broke first year teachers, it felt like such an escape to sit outside and decompress from the day. Plus since it totaled up to around $10, it fit perfectly into our budgets. Take it in a Cuban direction with lots of green olives or go Mexican with some spicy chipotle salsa and tortillas.  I am a sucker for a good food story. Stone soup and similar stories get me pretty much every time. So when I began researching where the name Ropa Vieja came from (which literally means “old clothes” in Spanish), my heart melted when I read this story. According to the folklore I came across, the story goes something like this: " There was once a very poor man who wanted to plan a special meal for his family who was coming home from a long journey. With no food to be found in his home and no money to purchase food, he went to his closet and gathered some old clothes. He then began to cook these old clothes in a stew, pouring his love into the stew as he stirred and prepared for his family to return. When his family finally

Easy Skillet Pork and Peppers

Here's a little truth bomb for you: I honestly wasn't excited to try this recipe. A friend suggested it and after some pretty consistent prodding, I finally caved and decided to give it a try even though my husband isn't the biggest fan of pork tenderloin or peppers, so I knew I'd be the one to have to eat all the leftovers. That knowledge had me mentally prepared for him to reach for a bowl of cereal within 10 minutes of dinner starting, but couldn't have been more shocked at his reaction. Not only did he not reach for the cereal, but he ate all of it! In fact, we both loved it. I'd say that it is the combination of the sweet onion, bell peppers, garlic, and pepperoncinis that really add a ton flavor to the dish with just a hint of spice. Plus, the pork stays nice and tender since it cooks right in the chicken broth and the simple pan sauce brings everything together for one delicious meal. These quick and easy Baked Chicken Fajitas are packed with veggies, all cooked in one pan, and ready in 30 minutes! Plus they are clean eating, low carb, gluten-free, and Whole30 friendly. This healthy One Pan Teriyaki Chicken Thighs and Vegetables is made with a simple homemade teriyaki sauce, tender chicken thighs, and tons of veggies for a delicious dinner that's ready in about 30 minutes. I have a serious addiction to teriyaki sauce. For about three years immediately following college, my idea of making dinner was throwing rice and veggies in a bowl and covering it with a combination of store-bought teriyaki sauce and Sriracha. Sometimes there was also some rotisserie chicken if it was a special meal. However, as I get older, I have come to realize that there is a ton of high fructose corn syrup and unnecessary additives in most store-bought teriyaki sauce, so I prefer to make my own at home.
