Slow Cooker Butternut Squash is an easy, delicious, and healthy side dish (no roasting or boiling needed) that you can make for any holiday meal. Mashed butternut squash is constant on our holiday table. It's something I have been watching my mother make for years and after thinking I didn't like it growing up, now it's a dish I look forward to and that we all love. Last week I wanted anything but fall comfort food after over-indulging on Thanksgiving but this weekend I woke up craving it. All I wanted was a big bowl of apple crisp but unfortunately, we had already gone through three batches of this Cinnamon Cranberry Apple Crisp during Thanksgiving week so it was time to switch it up. Baked oatmeal is one of my favorite dishes for lazy weekend mornings, so I decided to make an apple crisp inspired baked oatmeal full of cinnamon, baked apples, and brown sugar. To make sure the apples got soft and delicious, they are baked them first with cinnamon and brown sugar. You could add some melted butter as well if you want a richer flavor. Then the oats are added along with milk and an egg to help

Healthy Zucchini Lasagna is the perfect blend of traditional lasagna and a veggie lasagna to please everyone in the family. It's a family favorite along with this Healthy Slow Cooker Lasagna Soup . My son has never met a lasagna he didn't like. Sometimes I honestly think about Garfield when I think about him and his lasagna habit. This Healthy Apple Crisp made in the slow cooker is a lightened up version of traditional apple crisp that is made right in the crockpot. It's easy, delicious, and I would venture to say can be eaten for breakfast or dessert. Have you seen the honey crisp apples that are available right now? Around me they are amazing. Crisp and sweet and delicious. They are almost as good as the Macintosh apples I miss dearly from growing up in New England. And my favorite way to eat apples, apple crisp. Normally apple crisp is loaded with butter – the recipes I looked at had over a stick – but this one is lightened up but still packed with flavor. This is a rift on a Weight Watchers recipe that ingeniously uses apple butter to mimic some of the richness from the butter and made a bit more healthy with whole wheat flour. It also wouldn't be fair if I didn't tell you that I have been eating this for breakfast all week with yogurt. There is something so satisfying about warming up a bowl

There is something magical that happens to butternut squash when it is roasted with cinnamon. It becomes sweet with these delicious caramelized edges and you won't believe how quickly it disappears.  Roasted vegetables are probably my favorite side dish and I recently began adding butternut squash to the rotation on a pretty regular basis. It's a great lower carb option that I like to use instead of potatoes. While you can roast it with almost any spice blend, I think it pairs perfectly with cinnamon and nutmeg. If you aren't watching carbs, you could add maple syrup or brown sugar as well. The other thing I love about roasting butternut squash is that the leftovers are amazing. I love to throw them in my morning eggs, lunchtime salads, or use them for quick veggie tacos at night.
