One Pot Creamy Vegetable Pasta

This creamy vegetable pasta dish is everything I want to eat right now. It's warm, comforting, and couldn't be easier to make. Plus it is packed with nutrition from all the vegetables and tomatoes. If you have twenty minutes, some pasta, and any fresh or frozen vegetables - you can make this.  During a virtual happy hour with a friend last week, we were brainstorming about ways to use up some of the vegetables we had hanging out in the fridge. Although I always try to minimize food waste, I am more conscious about this than ever and want to take advantage of using everything.  Additionally, there have been lots of reader requests for ways to incorporate more frozen vegetables into meals instead of just making them the side dish. This recipe does both of those things. Tons of veggies loaded into a tasty, creamy, pasta dish that the whole family will love. Banana Peanut Butter Microwave Oatmeal

This easy peanut butter banana oatmeal made in the microwave in less than five minutes is a version of this classic microwave oatmeal recipe that we use all the time to make our morning oats. It's fast, affordable, nutritious, and has no added sugar.  This microwave banana oatmeal recipe is an absolute staple in our house and I was shocked to find out that I hadn't shared it yet on the website when I shared it on Instagram yesterday. It's easy to make, nutritious, and something my kids love. It's also a recipe that I love making since it keeps everyone full all morning so I can avoid multiple requests for snacks an hour after eating.  Lately, we have been relying on this recipe even more since our access to eggs has been limited.  I am lucky to have lots of oatmeal on hand and tons of frozen ripe bananas in the freezer, so this is a recipe I can easily make with what we have. It's also really easy to customize for whatever fruit, oats, milk, and toppings you ha

Simple Stovetop Lentils

Let's learn how to cook lentils right on the stove in less than thirty minutes. Lentils are affordable, super nutritious, and versatile. They can be used as a side dish or to make all kinds of main dishes including tacos , salads , sloppy joes , soup , burgers , and more. Lentils are a fantastic side dish and one we often don't think about. They can be cooked on the stove-top in about the same amount of time it takes to cook rice and can be flavored with all kinds of spices to match any meal. They are also packed with fiber, vitamins, minerals, and they are a good source of plant-based protein. Lentils also make a great base for a vegetarian meal or as a way to bulk up meat-based dishes and stretch your protein. Their hearty taste and texture make them a perfect option for dishes like tacos, sloppy joes, pasta (as a sub for meat), stuffed peppers, and more. They keep well in the fridge and freezer so you can make a big batch and use them in all kinds of dishes.   One quick

Sausage Lentil Soup

This easy lentil soup made with sausage is one of our go to pantry meals since I always have a  bag of dried lentils in the pantry and some sausage in the freezer. It can be made with any combination of sausage, vegetables, and spices you like for a filling, easy meal that feeds a crowd.  Lentils  have always been a staple in my pantry  and lately, I have been using them more than ever. They are nutrient dense, filling, packed with plant-based protein, affordable, and last forever in a cool, dry pantry. Plus they soak up flavor making them perfect for so many different recipes but especially for this Lentil Sausage Soup. The key to making this lentil soup really delicious is the sausage. The spices and seasoning in the sausage flavor the soup with needing to add tons of extra ingredients. For this reason, you'll want to choose a sausage that has a lot of flavor. Normally I use spicy Italian sausage since I love the subtle heat the spicy sausages adds to the soup.  The rest of t

Pantry Essentials (for Healthy Eating and Weight Watchers)

Lately, I have been getting lots of requests about how to stock a pantry that works for healthy living and Weight Watchers so today, I wanted to share a bunch of items I have been adding to my pantry. To make things easy, I specifically only chose items that are currently in stock on Amazon or other providers (at the time of this post) so that you could order them if needed.   In this unknown time, eating healthy may be the last thing you are thinking about, but for me, it's something that really helps with my mental health, physical energy, and general well-being. When I eat poorly, I just don't feel my best, which makes everything feel harder. So I am focusing on eating healthy most of the time with the occasional treat or special meal. It's all about balance and moderation, especially right now.  Additionally, this is a time to be kind of ourselves. When we don't have access to everything we are used to, are stuck at home, and dealing with a "new normal,"

4 Ingredient Salsa Black Bean Burgers

Salsa Black Bean Burgers with just four ingredients you probably already have on hand - canned beans, oats, whole wheat flour, and salsa. You won't believe how easy they are to make and how much flavor they have. As a food blogger, I usually feel the pressure to make everything homemade. However, to be honest with you, there are certain things I sometimes dread to make at home and veggie burgers used to be one of them. Normally they require lots of ingredients, chopping, blending or food processing, and waiting. Something I don't have time for most nights, especially when they don't end up tasting that much better than a frozen store bought burger. Luckily this veggie burger is different! With just a few ingredients you probably already have at home, you can make a killer vegetarian burger flavored with your favorite salsa. The salsa is key here since it adds most of the flavor, so make sure to choose one you love. And if your salsa is lacking, just add your favorite spi

Twelve Slow Cooker Chicken Thighs Recipes

Crockpot Chicken Thighs are one of my favorite things to make since chicken thighs are not only affordable but make for the most tender and juicy chicken, especially when made in the slow cooker. In my opinion, chicken thighs are one of the most under appreciated ingredients out there. Not only are they extremely affordable, but they guarantee a tender and moist chicken every time since they have slightly more fat than the leaner chicken breast. Plus they take on flavor really well, making them an ideal candidate for the slow cooker. As everything cooks low and slow together, the chicken absorbs all the delicious flavors in the recipe meaning you never have to worry about bland or boring chicken. Now when it comes to cooking chicken thighs in the slow cooker, here are some tips and tricks: Consider buying chicken thighs in bulk to get the very best price possible. They freeze well and you can use them as needed. I find that when I buy them in bulk, I can get them for about half th

Healthy Slow Cooker Lasagna Soup

This Crockpot Lasagna Soup is everything you love about lasagna but in an easy to make, hearty soup that's made in the crockpot. It's so much easier than traditional lasagna and is the perfect comfort food. We also this Skillet Lasagna and Zucchini Lasagna . I love everything about lasagna except all the work it takes to make. It isn't that I don't love spending time in the kitchen, because as a food blogger, it's something I absolutely love. But for some reason all the tasks that go into making a delicious lasagna - browning the meat, boiling the noodles, creating all the layers - just feels like too much lately.  That's why I am obsessed with this Slow Cooker Lasagna Soup. Not only does it use one of my favorite kitchen tools, the slow cooker, it's really couldn't be easier to make. The most time consuming step is browning the meat, which takes less than 10 minutes. From there it is basically a matter of dumping everything in the slow cooker. That&
