Brussels Sprouts Pasta with Bacon

Brussels Sprouts and Bacon Pasta with fresh lemon juice and Parmesan cheese is one of those perfect quick and easy dinners that comes together in less than 20 minutes but makes you feel like a restaurant chef. If you are a Brussels sprouts lover, this dish is a must make.  Two of my favorite ingredients, bacon and Brussels sprouts , all wrapped up in one hearty pasta dish - yum! I originally saw this recipe in the New York Times and couldn't wait to try it. It seemed like the perfect comforting dish to start the week and give us something to look forward to after a long Monday. To lighten things up, I decided to use less pasta as the original recipe used a pretty large serving. Another trick to keeping pasta dishes light is to use lots of veggies, that way no one misses the extra pasta.  I also swapped in some center cut bacon instead of pancetta and made sure to drain off most of the fat. Healthy Pumpkin Chocolate Chip Bread

Pumpkin Chocolate Chip Bread that's made with good for you ingredients but still tastes indulgent, delicious, and has all the pumpkin flavor you want this time of year. You can also enjoy pumpkin season with these Healthy Pumpkin Pancakes and Pumpkin Pie Oatmeal . It took me quite a long time to come around to pumpkin. I was never much of a pumpkin pie fan and even though I like pumpkin more than I ever have, I am still not a die-hard pumpkin spice fan. However, one major exception to that is pumpkin bread. If I had to choose one vegetable to eat every day for the rest of my life, I'd have to say broccoli would rank right up there. Perhaps even as the number-one vegetable in my life. And, what's not to like? It's tasty, good for you, and easy to cook in a variety of ways. Although I admit, once upon a time, it wasn't my favorite vegetable. Well, it was my favorite to try to sneak to the dog when no one was looking (he wouldn't eat it, either). But I just wouldn't even give it a chance. I don't know if I just inherently distrusted any healthy foods or someone told me it was gross, so I believed them without even trying it myself...who knows. I think my longest span of not letting broccoli even touch my lips was two years. Then, one day, I'm eyeing my then-boyfriend's mixed veggie and shrimp stir fry and he tells me if I want to take a bite, I have to take the broccoli too. So I did, and...well, you can guess the rest! This healthy sheet pan sausage with acorn squash, chicken sausage, bell peppers, and onions is quick and easy to toss together and cooks up on a single sheet pan. Perfect as a meal on its own or served with a nice green salad, brown rice, or some creamy polenta .  Busy weeks call for sheet pan dinners and this new recipe with chicken sausage and acorn squash is on repeat in our house.
