Grilled Plantains

Today’s post is basically a love letter to grilled plantains. Crispy and caramelized on the outside, soft and flavorful on the inside, this crave-worthy dish is the ultimate summer side dish. Oh, and did I mention you only need two ingredients? Have you ever seen plantains at the grocery store? Even if you don’t think you have, you’ve probably stumbled across them and just assumed they were bananas. While the humble plantain is wildly popular in Caribbean and Latin American cuisines, it’s vastly underrated here in the United States. Personally, I think it’s a travesty that more people in the US aren’t aware of how seriously awesome plantains are. You can fry them, roast them, grill them, or mash them. You can enjoy them as an appetizer, savory side dish, or even a sweet dessert. Plantains can do everything that potatoes and bananas can do, but with tropical flair. Just wait until you try out these decadent grilled plantains for yourself. If you weren’t already a believer, you will

I love serving them alongside a bowl of rice and roasted vegetables — something like these Sheet Pan Pesto Chickpeas and Vegetables — or with a side salad for a low-carb meal. Key Ingredients To make these spicy pork chops, you will need just a few key ingredients: Lean center-cut pork chop

Pollo Pibil

Pollo Pibil is a traditional Mexican dish from the Yucatan in which chicken is smothered with achiote paste, orange juice, and spices and then slow-cooked in banana leaves. This recipe takes that traditional Mexican braised dish, but makes it easier to make at home. Use it for tacos, panuchos, burritos, quesadillas, and more.  It’s no secret that I absolutely love a good slow-cooker meal. During the cooler months, we could all use more cozy recipes in our life. That’s where this mouth-watering Yucatecan Pollo Pibil comes in. Even if you don’t own a slow cooker, you can easily make this dish in the oven or pressure cooker. Hailing from the Yucatan peninsula, Pollo Pibil is a classic dish made with chicken thighs marinated in achiote paste, spices, and a flavorful blend of citrus juices. The meat is then cooked until it’s fork-tender, easy to shred, and bursting with amazing flavors. This dish is more often made with pork and is called Cochinita Pibil. However, it is also really del

Roasted Tomato Basil Soup

Ah, soup season! This time of year always has me revisiting the classics and looking for ways to improve them. Take the iconic tomato soup, for example. There are so many unique ways to alter and enhance this ultra-popular fall/winter dish. When I began to work on this Roasted Tomato Basil Soup recipe, I knew I had discovered a winner. This fall soup recipe is vegan-friendly, low-carb, and mind-blowingly delicious. Seriously, it never ceases to amaze me how much incredible flavor this dish yields, though very little work! The key is roasting the tomatoes beforehand to deepen and enhance the flavor. That simple step does wonders for this tomato soup, much better than boiling the tomatoes. It is also so much better than any canned tomato soup you may have tried and honestly is couldn't be easier to make. Try serving this soup with a loaf of sourdough bread or crackers for a delicious and cozy winter meal. Grab a grilled cheese sandwich and start dipping for a classic winter meal

Blackened Steak Tacos

If you’ve ever lived in or traveled to LA, then you probably know how serious the taco scene is. We have some of the best Mexican cuisine in the country, so it’s safe to say tacos are a big deal here. When I’m trying to save a little dough or cut back on calories and fat, I love making my own homemade versions of the steak tacos I fall in love with around the city. These Blackened Steak Tacos are a shining example of the kind of influence LA dining has had on my cooking. This delectable recipe combines two things I absolutely love, blackened steak and tacos. Blackening a steak is a quick and easy way to sear it and seal in the juices for super tender meat on the inside and a flavorful, crispy crust on the outside. It’s mouthwateringly tasty and makes for the perfect way to upgrade your tacos. When paired with creamy Mexican cheese, bright herbs, spicy jalapenos, and the salsa of your choice (I’m partial to my Pineapple Serrano Salsa ), these Blackened Steak Tacos are out of this

Blueberry Oatmeal Muffins

Blueberry Oatmeal Muffins are made with wholesome ingredients like rolled oats, fresh blueberries, and applesauce. At less than 150 calories per muffin, these mouth-watering treats are the perfect healthy and satisfying way to start your day. There’s really nothing quite like a fresh blueberry muffin in the morning. You know the kind I’m talking about—golden and crispy on the outside, warm and pillowy soft on the inside. Dotted with fresh blueberries and oozing with incredible flavor. The downside is that most bakery muffins contain well over 500 calories a pop and don’t even keep you full. Luckily for you, these Blueberry Oatmeal Muffins are not like most muffins. Don’t worry, they are still every bit as delicious as your favorite bakery muffin. The only difference? These muffins contain only a fraction of the calories and will actually keep you full. Oh, and for the price of one of those bakery muffins, you could make an entire batch of these! Now that’s what I call a win-win. Th
