Healthy Meal Plans: Week 4 (Sale Ending Soon!)

Welcome to this week's meal plan! I couldn't be more excited to welcome all our new members and start another year of easy, healthy eating with our weekly meal plans! This week is packed with easy to prepare, family friendly recipes that you will love! Now let's talk about the food! This week starts out with one of my family's favorite recipes - Slow Cooker Jerk Chicken with Mango Salsa. Monday night brings a reader favorite, Spinach Artichoke Pasta. Tuesday brings Healthy Korean Beef Bowls and Wednesday is Greek Yogurt Parmesan Chicken. To end the week, enjoy Sheet Pan Roasted Salmon, Pork Fried Rice, and easy Salsa Verde Turkey Tacos. Meal Prep: A little work on Sunday goes a long way to make meals faster during the week. You can prep the quinoa, brown rice, and prep all your veggies. These Banana Chia Muffins can be a healthy replacement for your favorite coffee shop treat. These good for you muffins have both quinoa and chia seeds for a superfood packed muffin that still tastes incredible. Sometimes Mondays are just the worst, especially Mondays when you go to bed mentally going through your mile-long to-do list that seems to be growing by the minute. Crockpot Chickpea Tikka Masala takes just like your favorite Indian takeout but is made at home in the slow cooker for a healthy, satisfying meal. After sharing this Slow Cooker Chicken Tikka Masala last week, there were lots of requests for a vegetarian option, and this one will hit the spot. Tikka Masala is probably one of the most well-known Indian dishes out there and for good reason: It is seriously delicious. The only problem is that usually it is made with heavy cream and therefore packed with loads of calories and unhealthy fat. Creamy Cajun Chicken Pasta

We are pretty obsessed with Cajun spices in our house and this Cajun Chicken Pasta is at the top of the list. With the creamy sauce and Cajun flavors, it pretty hard to beat. It's almost embarrassing how much I have been making this lightened up Cajun chicken pasta lately. We just can't get enough of the creamy, spicy, smoky sauce and pasta - it's like a bowl full of comfort. Plus you can make it in about thirty minutes with ingredients you probably already have at home. Perfect for a busy weeknight.  This dish was inspired by the many restaurant versions of this dish, except...it's not over 1500 calories a bowl. If you want to be scared for a minute, do a quick Google search. Some of these restaurant versions over 1500 calories and 75 grams of fat. This easy Mexican Shrimp Skillet will be your new favorite weeknight dinner. With seasoned shrimp, black beans, corn, and tomatoes - this recipe is filling, hearty, and healthy.
