Healthy Broccoli Cheese Soup

As much as I love buying fresh veggies at the farmer’s market, with colder weather and winter approaching it isn’t always easy (or affordable) to find your favorite fruits and veggies. Luckily when that happens, I know I can turn to frozen fruits and vegetables to get the same nutritional punch. That’s why today I wanted to share a delicious recipe for Healthy Broccoli Cheese Soup made with frozen broccoli.  There are a few things I love about this recipe that make it quicker and healthier than a traditional broccoli cheddar soup. For starters, not having to wash and chop 6 cups of broccoli florets saved lots of prep time and cost about half as much. Plus, this soup is packed with delicious broccoli and cheddar flavor but without all the fat and calories. As you probably know, typically broccoli and cheese soup is packed with cream and more cheese than necessary. For this recipe, in order to cut calories, save time, and add nutrients I used extra frozen broccoli, evaporated...

You may or may not know this but I used to have an aversion to veggies. Like, didn't like any of them...well, very few of them. But, when it was time for me to make a lifestyle change for my health, I knew that incorporating a variety of veggies into my life was one of the top priorities. So, I started with the common veggies I could find at the store: carrots, broccoli, cauliflower, and yes, zucchini. I tried it raw, peeled, baked , grilled , sauteed , stuffed , stir fried , you name it. And slowly, but surely, I learned to love them all sorts of ways. But it wasn't until I found a recipe for baked zucchini that I learned of my most favorite way to eat zucchini: Bake it until it's crispy and then, what you get is basically a zucchini chip. I mean, if i could eat cheesy, crispy zucchini chips,...

It one of those perfect dishes that's easy to make, works great for a big family dinner, and can even be frozen for future meals. I love baked pasta dishes – they’re simple to make, tremendously filling, and they leave a nice, solid glow in your tummy. Baked pasta is the perfect food for a cold miserable rainy day, and this recipe is no exception. A big thing that I love about this dish is how grown up it feels; this is not a childhood pasta dish, and does not feel like it. Baked Pasta with Zucchini is a dish that feels like it would be at home in a five star restaurant with a glass of expensive wine along with it. However, it’s easy enough to make that you don’t need to have gone through culinary school to know how to make it! What Goes in Baked Pasta with Zucchini? For such a flavorful dish, there are surprisingly few ingredients in this pasta bake, and it all begins (o...
