Healthy Meal Plans: Week 5

As we head into February, I find it's a great time of year to take a look back on how January went. If you are rocking your goals, this is a great time to recognize all the hard work you have done and progress you have made. Not where you hoped? That's ok too! It's never too late to get started. Use that as motivation to start today.

Now on to this week's meal plan! It starts out with a delicious Butternut Squash, Spinach, and Sausage Breakfast Casserole, a delicious Spicy Chicken Chili, and Slow Cooker Tuscan Turkey Sloppy Joes. Monday brings Creamy Mushroom and Chicken Pasta and Tuesday is Sesame Chicken with Broccoli. Wednesday brings Beef Fajitas and Thursday is Sheet Pan Lemon Pepper Chicken. To end the week, meals include Tilapia Burgers and Pork Fried Rice.

Here are some of the meals in this week's meal plan!

Beef Fajitas: These are a family favorite and I am always shocked at how quickly they disappear.

Slow Cooker Beef Machaca

Crockpot Machaca is a traditional Mexican dish full of peppers, tomatoes, and spice that makes a delicious taco or burrito filling. The beef comes out perfectly tender and it has just the right amount of heat.  Last night I dreamed about being a cowboy, about long nights on the trail and campfires and ….smores. So maybe it was more like camping than cowboying, but I was riding a horse and dressed in the best of cowboy attire. Where did this cowboy dream come from? I think the blame lies with this Machaca which I ate much too much of last night.
