Healthy Meal Plans: Week 8

As we head into the middle of February, this week is all about flavor packed recipes that will keep the whole family happy! From Mac and Cheese to a healthy take-out beef dish to the best ham and cheese weekend omelet.

Now on to this week's meal plan! It starts out with Southwest Black Bean Egg Muffins, Crunchy Thai Chicken Salad, and Slow Cooker Apple BBQ Turkey. Monday brings Broccoli Macaroni and Cheese and Tuesday is Easy Skillet Pork and Peppers. Wednesday is Hoisin Beef and Cabbage and Thursday is One Pot Lemon Garlic Chicken and Asparagus. To end the week, meals include Five Ingredient Glazed Salmon and Turkey Burger Quesadillas.

Here are some of the meals in this week's meal plan!

Crunchy Thai Chicken Salad: This healthy salad is packed with tons of crunch, protein packed chicken breast, and the most amazing creamy Thai peanut dressing.

Skillet Pork and Peppers: This quick and easy dish made with lean pork tenderloin and peppers will become a favorite, especially when served with creamy polenta like in this week's plan.

Salsa Verde Turkey Tacos with corn tortillas and green salsa.

Southwest Black Bean Egg Muffins: I love having healthy options for breakfast ready to go right in the fridge. These egg muffins have tons of taco flavor and make the perfect grab and go meal.

One Pot Creamy Parmesan Chicken and Broccoli: This is an older recipe but one I still make all the time for my family. Delicious mac and cheese with broccoli and an easy and light cheese sauce.
