Healthy Meal Plans: Week 14

Get excited about this week's meal plan! It has so many reader favorites including Spinach Tortellini Soup, the best crispy baked chicken, delicious Caesar burgers, and my favorite lunch time salad.

Now on to this week's meal plan! It starts out with Chile Relleno Frittata, a Mexican Chopped Salad, and a Slow Cooker Tomato Balsamic Chicken. Monday brings a Spinach Tortellini Soup and Tuesday is Healthy Greek Meatballs. Wednesday is a Crispy Buttermilk Chicken and Thursday is a Hoisin Pork Stir Fry. To end the week, meals include Italian Salmon with Tomato Basil Salsa as well as a Chicken Caesar Burgers.

Spinach Tortellini Soup: An easy soup that is packed with flavor. Reader Sarah shared, "Made this soup last night and my whole family gobbled it up. No one complained about the spinach - which is saying a lot in our house. So good! "

Slow Cooker Beef Machaca

Crockpot Machaca is a traditional Mexican dish full of peppers, tomatoes, and spice that makes a delicious taco or burrito filling. The beef comes out perfectly tender and it has just the right amount of heat.  Last night I dreamed about being a cowboy, about long nights on the trail and campfires and ….smores. So maybe it was more like camping than cowboying, but I was riding a horse and dressed in the best of cowboy attire. Where did this cowboy dream come from? I think the blame lies with this Machaca which I ate much too much of last night.
