Healthy Chow Mein (Panda Express Copycat)

Healthy chow mein made with noodles, cabbage, and celery in a tasty homemade sauce is an easy side inspired by your favorite Chinese takeout. Serve it with this healthy General Tso's Chicken or Mongolian Beef . If you love Panda Express chow mein (or any fast-food chow mein, for that matter), this healthier version you can make at home is for you! Not only is it better for you, I think it tastes even better than the real thing! I am so excited to share today's Chow Mein recipe with you. Not only is it delicious, but it is also so much healthier than the Panda Express version that I know so many people love. Plus it is so easy to make. It takes less time to make it at home than it would take to leave your house and pick up the take-out version. And with only 140 calories per serving (compared to 490 in the real thing), it's a no-brainer when it comes to what to make for dinner-decision-making time. Now let's talk about the recipe. While I think it's pretty stra

How to Grill Vegetables: The Ultimate Guide

I really enjoy cooking any number of ways, but if I had to choose just one method to use for the rest of my life, I have to say, it might be the grill. Besides, should I ever find myself on a deserted island, there will be no ovens, microwaves, or stovetops, so I figure my grill game best be on point. Everyone knows the grill is great for cooking meat. Just talking about the grill can conjure up the smell of smoky meat wafting over from your neighbor’s deck. Or it can make you start to plan for that first warm day of spring when you can fire up the grill and host a barbecue, adding an assortment of meats on the grill for your guests. But what about vegetables? Have you thought about throwing those on the grill too? I mean, there’s usually plenty of space there on the grates between the chicken breasts and sausages, right? Grilling vegetables not only rounds out your meal, adding nutrients and minerals and other good stuff to your diet, but is also super tasty. Plus, having your who

Easy Grilled Corn (How to Grill Corn)

Don't be intimidated by grilling corn! Learn how to make grilled corn that comes out perfectly tender with just the right amount of char every time. Serve it with all your favorite grilling dishes like this Grilled Pineapple Chicken or Grilled Pork Chops . When summer hits you can be absolutely sure that I will be grilling corn at least once a week. It is my favorite summer side dish and I could literally eat corn for a meal and be happy.  The other thing I love about grilling corn is that it can be used in so many different ways. Although I am partial to simply slathering it in butter and salt, I always make enough for leftovers. It is incredible in salads, tastes amazing with tacos or quesadillas, and make the best morning eggs. The sweet, slightly smoky flavor makes almost anything taste good. I even throw it in pancake batter with some shredded zucchini for amazing savory pancakes. With all that, I was shocked to find out that many people actually get nervous when it comes

Sweet and Spicy Salmon

This Pan Seared Salmon with a sweet and spicy spice rub is one of my favorite quick and easy dinners. Serve it with a Cucumber Avocado Salad or an easy 10 Minute Cabbage Stir Fry . Do you have a favorite food combination? Dessert, dinner, breakfast, whatever...you have to have things together. Like, some people like sweet and sour. Or hot and garlicky. Or sweet and salty. For me, it's sweet and spicy. I cannot get enough of that flavor combination, especially with seafood. I'm not sure why seafood specifically but there's something about it and the combo of sweet sugar and spicy pepper, chili powder, and paprika that makes me want to eat everything I've cooked and then lick the plate. There are hardly ever leftovers when I make this Sweet and Spicy Salmon either. There is sometimes almost an injury though if it comes down to the last piece and me and the hubs are about to have a fork-fight about it. (Maybe I'm exaggerating, maybe not.) For this salmon recipe, I

Easy Shrimp Cocktail (Roasted or Poached)

Shrimp Cocktail is a staple appetizer dish in so many restaurants but it is so easy to make at home and much more affordable. In less than 15 minutes, you can have delicious shrimp with homemade cocktail sauce to serve at any party or special occasion. Whenever I see shrimp cocktail on a menu or at a party, I immediately want to eat it all. There is just something so delicious about the sweet, cold shrimp and spicy sauce. I am getting hungry just thinking about it. Plus it is low in calories (and points), making it a no brainer for anyone who is trying to eat healthy.  However, I don't love the price tag. Shrimp cocktail in a restaurant can be $10-$15 and usually, you end up with just 4-6 shrimp. Make it at home, and you can have more than a pound of shrimp for the same price. And don't get me started on the store bought shrimp cocktail rings. In my opinion, they are almost always a disappointment. The shrimp are watery and flavorless.  So instead of dropping a pretty penny

Slow Cooker Greek Stuffed Chicken Breasts

Crockpot Chicken Breasts stuffed with feta cheese, spinach, roasted red peppers, olives, artichokes, and black olives are a truly special meal that's surprisingly easy to make. My mind was blown last week. Did y’all know it was possible to stuff a chicken breast and then cook it in the crockpot? Literally stuffing it with anything and a few hours later, deliciousness. And in case you were thinking what I was, this isn’t like bad wedding food stuffed chicken breasts. These are delicious, moist, slow-cooked stuffed chicken breasts that are full of flavor. The other thing I love about this recipe is that it takes what can be a boring chicken breast and turns it into something really special. It looks like a lot of hard work but is actually super easy and impressive. Once you learn the base recipe, you can experiment with all kinds of different fillings.  When you are making these stuffed chicken breasts, there are a few tricks to keep in mind to make the stuffing process easy. Grilled Chicken with Peach Cucumber Salsa

Kick up your chicken with this delicious, nutritious Grilled Chicken with Peach Cucumber Salsa recipe, the perfect recipe for slowing down and enjoying dinner after a long day! My summer wish is but a small one: I wish that peach season would never end. Every week I look forward to heading to the farmer's market and stocking up on peaches and all the other amazing stone fruit that you can buy right now. My favorite farmers market has a cherum that is a combination of cherries and plums - don't get me started on how good it is. But no matter how many millions of varieties of plums and pluots there are, because there seem to be new ones all the time, I always go back to the peach and these days, I find myself eating at least one a day. So it's no surprise, then, that this past week I decided that I needed to incorporate some peaches into dinner time in addition to having them as my daily snack. Since I make a lot of fruit salsas, that seemed like the most perfect place to

Grilled Sirloin Steak with Chimichurri

Grilled Sirloin Steak with Chimichurri packs in so much flavor from a homemade chimichurri sauce made with parsley, cilantro, basil, and garlic all served over a simple grilled steak makes the ultimate healthy steak dinner. Serve it with some Grilled Cauliflower and Grilled Red Potatoes for a delicious grilled dinner. We are pretty obsessed with chimichurri in our house and are always looking for any excuse to whip up a batch. And my favorite way to eat it is with a simple, grilled steak. It's the first thing I make when grilling season starts and a constant on our menu throughout the warmer months. Now to keep this dish healthy and relatively light, it's important to make sure to choose a nice, lean cut of meat. You can use a lean sirloin steak like the recipe suggests or go for a lean flank steak. Both pack in tons of beef flavor but are leaner cuts. Then when it comes to the chimichurri, the basics are the same, but you'll want to use less oil. Normal chimichurri is
