In a year that was unlike any other, more people than ever were cooking at home and your favorite recipes show that! This year was all about quick, healthy, and delicious dinners. In a year that was unlike any other, more people than ever were cooking at home and your favorite recipes show that! This year was all about quick, healthy, and delicious dinners. Low Carb Coconut Muffins

Although I don’t adhere strictly to a low-carb diet, I do try and avoid carb overload. I also find that adding a week of low-carb meals to my diet can help me break through plateaus or kick start weight loss after an indulgent weekend or vacation. However, like anyone living that low-carb life, I crave my favorite carb-laden products the minute I commit to low-carb. We always want what we can’t have, right? So when those cravings strike, I've found these low-carb muffins made with coconut flour are the perfect recipe to fulfill cravings while not eating all the carbs in sight. Coconut flour is low in carbohydrates but high in fiber and protein, which makes it a great baking alternative. If you can’t find it in your local market, try Trader Joe’s (it’s only $2.99!) or Amazon. I should warn you though with one quick note about these muffins: If you aren’t used to low-carb baking, the muffin texture is very different from a traditional muffin. Strawberry Overnight Oatmeal

Strawberry Overnight Oatmeal is the healthy, socially acceptable way to have strawberry shortcake for breakfast. A nutritious meal so rich and creamy that you might actually forget that you aren’t eating dessert, this east Strawberry Overnight Oat recipe will fuel your all morning long. This is one of those great breakfasts that you can prep ahead of time. Make up a big batch and keep it in the fridge all week for a grab and go breakfast. It can be eaten right out of the fridge, at room temperature, or warmed up with a splash of milk. Secret to Making Strawberry Overnight Oats Strawberries are a tricky ingredient when it comes to overnight oats. They can disintegrate and get really mushy when they soak overnight with the oats. Roasting beets until they are browned, caramelized, and crispy is the absolute best way to cook a beet. These easy roasted beets come out delicious every time and are tossed with a delicious combination of honey and balsamic vinegar for the best side dish.  I know what you're thinking: Why would I roast my own beets when I a) don't like them or b) can just get them already roasted and pre-packaged? The answer is pretty easy and it's a) because you haven't truly tasted a beet till you've roasted your own and b) everything tastes better and is better for you when you make it yourself. You can make these beets without preservatives and to your own taste. Less salt and oils means better for you, and isn't that why we're all here?
