Roasting beets until they are browned, caramelized, and crispy is the absolute best way to cook a beet. These easy roasted beets come out delicious every time and are tossed with a delicious combination of honey and balsamic vinegar for the best side dish.
I know what you're thinking: Why would I roast my own beets when I a) don't like them or b) can just get them already roasted and pre-packaged?
The answer is pretty easy and it's a) because you haven't truly tasted a beet till you've roasted your own and b) everything tastes better and is better for you when you make it yourself. You can make these beets without preservatives and to your own taste. Less salt and oils means better for you, and isn't that why we're all here? Now, for full disclosure purposes, I will admit that I didn't start to like to eat and roast my own beets till about 5 years ago myself, so I understand your hesitation. But if I can do it (and enjoy it!) then you can, too!
What do you need to roast beets?
You don't need a lot of fancy equipment or ingredients to get delicious roasted beets at home. All you need are 2 beets of any color (they come in red, purple, yellow, orange, and various hues in between), shallots, olive oil, honey, balsamic vinegar, salt, and pepper.
That's it, nothing fancy there. Oh, and you can also substitute maple syrup for honey as well if you don't have that or would prefer maple over the sweetness of honey. Easy-peasy.
Do you have to peel beets when roasting?
I always peel my beets before roasting. I don't like the skin. But you can cook them with the skin on if you prefer.
To remove the skin from the beets, use a knife or a vegetable peeler. Peel them carefully. You can also remove the skins after you've cooked them. They will come off easily once they are cooked.
What makes beets healthy?
Beets are super healthy for you. They are even considered a "superfood" for the abundance of healthy vitamins and minerals that they possess. Beets are low in fat and calories. They have a little bit of protein and fiber, as well as vitamins C and B6, folate, magnesium, potassium, phosphorus, iron, and manganese.
Beets can help give you an energy boost, improve your brain power, fight inflammation and keep your teeth, skin, hair, and nails their healthiest, and can help regulate your blood sugar.
Ideas for Eating Roasted Beets
- Eat beets alone as a side dish — delicious!
- Beets go well with richer meats like dark chicken and turkey meat, duck, ham, beef brisket, pork, and salmon.
- Cut up roasted beets and add to a salad with golden raisins and some goat cheese, so good.
- Roast beets alongside potatoes, squash, and turnips and eat them all together with a sprinkling of olive oil, salt, and pepper.
- Add beets to a hummus or other dip, spread, or dressing that you enjoy. Blend for a lovely red color and terrific flavor.
How do you make Roasted Beets?
Roasting beets is easy! You'll see!
First, preheat the oven to 425 degrees and line a baking sheet with parchment paper.
Next, peel the beets by cutting the tops and bottom off and peeling the skin off around the beet. Slice the beets into wedges, about ½ inch thick at the widest part. Next, peel the shallots and cut them into quarters.
Toss the beets and shallots together in a bowl with olive oil, salt, and pepper. Then add them to the baking sheet in a single layer. Put the roasting sheet in the oven for 30-40 minutes or until the beets are just about tender all the way through.
Take the pan out of the oven and drizzle with honey (or maple syrup) and balsamic vinegar and stir it all around with a wooden spoon. Add the pan back to the oven for another 10-15 minutes to allow the beets to tenderize all the way and for the honey and balsamic to caramelize.
Remove, season with more salt and pepper if desired and add any fresh herbs for a garnish/additional flavor. Enjoy!
