Sesame Soba Noodles with Fresh Vegetables

A healthy and delicious veggie packed recipe that's ready in under 10 minutes. These easy Sesame Soba Noodles are paired with sugar snap peas, carrots, and edamame for a protein packed noodle dish that works great as a side dish or main course.  Can you believe that this meal comes together in about 10 minutes! Hearty soba noodles, edamame, carrots, sugar snap peas, and a simple soy sauce and sesame dressing truly make a delicious meal that is perfect for warm summer nights. Lately, it has been getting hot during the day and without air conditioning, I need dinners that produce minimal extra heat so that we all don't melt during dinner. Since soba noodles only need about 5 minutes of cooking, they are a great option for nights like this. They also taste delicious cold, which is how I normally like to serve them. Although you could keep the veggies raw for this dish, I like to boil them with the noodles for 2-3 minutes until they are just tender. This makes them super bright

With this simple and easy Zucchini Noodle Bolognese, you won't even miss the pasta. Works great for a gluten-free, Paleo, low carb, or Whole30 diet or anyone looking for a lower calorie option for pasta. My husband would eat bolognese every night if I would get on board, complete with a huge pile of pasta and a loaf of garlic bread. He was blessed with an amazingly fast metabolism. Unfortunately for me, that just isn't the case, and pasta will never be something I can eat all the time. Wrap them up in crunchy lettuce, add carrots and cilantro, and you've got a great appetizer or meal. You'd think by now we'd have slow cooked it all, but there is always something new on the horizon.
