What is Blue Cheese?

While blue cheese can range in density from creamy to crumbly and in flavor from subtle to pungent, there is one thing that is always consistent. It’s blue. So, why is blue cheese blue? The blue-ish veins or spots in blue cheese come from the cultures of a mold called Penicillium.

This mold is added to the cheese curds after they have been drained and is then left to age for 2-3 months. During this time, the exposure of oxygen causes the blue mold to grow and spread throughout the cheese. It sounds a little scary, but this type of mold is perfectly safe to consume. It’s also what gives blue cheese its signature aroma and flavor.

What You’ll Need to Make Blue Cheese Dressing

The key ingredients you will need for this tangy dish include:

  • Yogurt: I use plain nonfat yogurt for this recipe, but you could also use plain Greek yogurt if you prefer that instead.
  • Buttermilk: If you can’t find buttermilk, you can use sour cream or mix a buttermilk powder with water. Alternatively, you could make your own substitute using one cup of milk and one tablespoon of lemon juice or white vinegar.
  • Blue cheese crumbles: The most important part of our dressing! This is what gives it the rich, tangy flavors and creamy texture.

  • If you can’t find crumbled blue cheese at the store, you can buy the kind that comes in a big chunk and crumble it into smaller pieces yourself.
  • Don’t have buttermilk at home? No problem. You can use sour cream instead or make your own buttermilk substitute by mixing a cup of milk with a tablespoon of lemon juice or white vinegar. If you opt for the latter, make sure to let the mixture sit for 5 minutes before using it in the recipe.
  • If you want to add a little heat, add in a few drops of your favorite hot sauce or a pinch of cayenne pepper.

How to Store This Dish

This dish can be stored in the fridge in an airtight bag or container for up to one week. I do not recommend freezing it, as it’s a dairy-based dressing and will separate in the freezer. To avoid thawing it out and discovering a clumpy, runny dressing that tastes a bit off, I would stick to keeping it in the fridge and making more as needed.
