Even though a stir fry is a simple recipe, I have some more tips I wanted to share with you. These tips will help you make the best stir-fries that could even taste as good as takeout.

  1. Cook the meat first. Start by cooking the meat first and then remove it from the pan before adding your vegetables. This prevents the meat from becoming overcooked and tough.
  2. Cut meat thinly: Another essential step is slicing the meat very thin before cooking it. In fact, placing the meat in the freezer for 10-15 minutes can help you slice it more easily. Thinly sliced proteins cook quickly and evenly.
  3. Use fresh garlic and ginger. The fresh ginger and ginger not only adds incredible aromas but it has a powerful flavor that makes the entire recipe taste better. It will not have the same burst of flavor with garlic or ginger powder.
  4. Add edamame. It's a really healthy and protein packed ingredient that adds some flavors to your stir fry.
  5. Add the sauce last. If you add the sauce too early, you risk overcooking the stir fry or ending up with soggy veggies. The sauce only needs to be added the last couple of minutes.
  6. Use your favorite vegetables. This is a really easy way to use up any leftover veggies that you have in your refrigerator.
  7. Cornstarch is your friend: Many stir fry recipes rely on cornstarch to thicken the sauce. It is used in two ways. Either toss the protein in the cornstarch before cooking. This will also help it get crispy and then thicken the sauce. It can also be added to the sauce directly.
  8. High heat is a must: Many times stir-fries don’t turn out because the pan isn’t hot enough. When cooking in a wok, it should be very hot. In a regular pan or skillet, you also want to crank up the heat. Water should sizzle and evaporate immediately when splashed on the pan. If it doesn’t, it isn’t hot enough.
  9. Cook in batches: If the meat can’t fit in the pan in a single layer, then cook it in batches. Crowding the pan will cause the meat to steam instead of sear. This results in chewy meat.
  10. Prep everything in advance: Stir fries cook very fast, so always prep everything in advance before you start cooking. That includes the meat, vegetables, and sauce. If you try and chop the veggies while the meat cooks, you will undoubtedly end up with overcooked meat.
  11. Use the right pan: For the best results, cook these dishes in a wok or cast-iron skillet. Stir fries need high heat and these work best.
  12. Stir often: This should be obvious given the name, but make sure to stir the dish often so that nothing burns. Since the dish cooks at high heat, nothing should cook in one place to too long.

It's not really a stir fry with a delicious sauce. Here are four quick and easy sauces to make at home.  Make them in a glass jar and keep them in the fridge for quick use. 

  • Classic: Combine 1/2 cup of low sodium soy sauce with 1/2 cup of chicken broth, 2 tbsp honey, 1 tbsp sesame oil, 1 tbsp rice vinegar, 2 minced garlic cloves, 1 tbsp minced ginger, and 1 tbsp cornstarch.
  • Pineapple Hoisin: Combine 1/3 cup pineapple juice with 1/4 cup Hoisin sauce, 1 tbsp sesame oil, 1 tbsp honey, 1 minced garlic clove, 1/2 tbsp minced ginger, and 1/4 tsp red pepper flakes. 
  • Sweet and Spicy: Combine 1/2 cup of low sodium soy sauce with 1/2 cup of chicken broth, 2 tbsp honey, 1 tbsp Asian chili paste, 1 tbsp sesame oil, 1 tbsp rice vinegar, 2 minced garlic cloves, 1 tbsp minced ginger, and 1 tbsp cornstarch.
