Asian Peanut Slaw

This easy Asian Slaw is loaded with flavorful ingredients like cabbage, soy sauce, fresh cilantro, peanut butter, and lime juice. This vegetarian and low-carb dish is the ultimate side dish or topping for your favorite tacos and bowls. To be completely honest with you, I have never been the *biggest* fan of slaw. None of the pre-packaged versions I tried ever did anything for me. When I made this Asian Peanut Slaw for the first time, I finally realized that slaw could be the absolute best thing ever. When made right, it’s the perfect way to add a ton of phenomenal flavor and crunchy texture to a meal. The main difference between homemade slaw and store-bought slaw is that the latter is loaded with a ridiculous amount of artificial sugars and preservatives. On the flip side, my Asian Slaw is made with cabbage, jicama, and other veggies tossed in a homemade spicy peanut lime dressing. All the good stuff you love and none of the fake stuff you don’t! Ground Beef Bulgogi Bowls

I don’t know about you, but healthy meals that cook in under 30 minutes are my absolute favorites. If you're looking for a meal that is quick, easy to make, bursting with flavor, and ultra photo-worthy, this is the one. Ground Beef Bulgogi Bowls are loaded up with Korean bulgogi-style beef and tons of veggies, all served over a bed of fluffy rice. If you’ve never made bulgogi at home, don’t let the name scare you off. It’s super easy to whip up and there’s a good chance you already have all the ingredients at home. My bulgogi sauce is made with soy sauce, brown sugar, sesame oil, ginger, garlic, green onions, and red pepper flakes. Once you’ve mixed together the bulgogi sauce ingredients, you simply pour it into the pan with your ground beef and stir until it’s thoroughly combined. The result is a little savory, a little sweet, and a LOT delicious. [box:ideas:10020] My favorite way to serve Beef Bulgogi Bowls is over a bed of brown rice with lots of veggies on the side. Howeve

Steak Tacos

These healthy Steak Tacos taste better than your local taco shop but are made with good for you ingredients that most people already have in their pantry. By using a chili and cumin spice rub along with plenty of lime juice, the steak comes out tender and packed with flavor. Consider serving it with these Frijoles Charros  or Mexican Street Corn . Steak tacos are always the answer. Whenever I am staring at the fridge at 5 PM and don't know what to make for dinner or planning for a last-minute get-together, tacos are my number one option. They cook quickly, are almost universally loved, and are affordable to cook for big crowds. Plus if you take the time to put together a wide array of toppings, it feels like something you spent lots of time planning. I always put out two to three different kinds of salsa - pico de gallo , corn salsa , or  avocado salsa are all delicious. Then add chopped cilantro, onions, tomatoes, jalapenos, shredded cheese, sour cream, and plenty of avocados

Chipotle Fajita Veggies

I don’t know about you, but I love a good Chipotle burrito bowl. Of all their toppings, the fajita vegetables are easily my favorite. Luckily, I don’t have to go to Chipotle to enjoy them! These Copycat Chipotle Fajita Veggies are tender, crisp, healthy, and incredibly flavorful. Oh, and did I mention they come together in under 10 minutes? One of my favorite things about this dish is how simple it is to make. It doesn’t take a million spices to achieve that mouthwatering flavor; just veggies, oregano, salt, and a little olive oil. If you’re looking for a taste of your favorite restaurant at home, these copycat fajita veggies are the ultimate way to get it. When I’m cooking up Mexican-inspired cuisine, this healthy side dish recipe is always a staple. Whether I’m whipping up sheet pan steak fajitas , black bean tostadas , or chicken burrito bowls , these delicious fajita veggies always find their way onto the table. If you’re on the hunt for a healthy side dish that is both conven
