During the spring and summer months, asparagus is easily one of my favorite veggies to eat. It’s versatile and can be enjoyed in a ton of different ways, from cold salads to hot meals on the grill.

This grilled lemon asparagus recipe has got to be one of the best asparagus recipes I’ve tried and the best part is that it only takes 10 minutes to prepare.

All you need is fresh asparagus, olive oil, lemon juice, feta cheese, salt, and pepper. Simply season your veggies, cook them on the grill, then mix them with the lemon and feta just before serving the dish.

Just like that, you’ve got the perfect summer side dish. You could even swap out the asparagus if you have another green vegetable you want to cook up like grilled broccoli or grilled zucchini.

Serve this dish alongside juicy grilled chicken or fish for a light meal or add some grilled potatoes or whole-grain pasta salad to beef it up with some healthy carbs.

  • You can make a lemon feta vinaigrette to pour over the asparagus by mixing together olive oil, lemon juice, red wine vinegar, and feta cheese until combined. Save the vinaigrette and pour it over the asparagus just before serving it.

How to Store the Dish

I think that this dish is best served right away, but you can also store it for later if you have leftovers or want to make extras for meal prepping. To store cooked asparagus, allow it to cool completely before placing it in an airtight container or tightly wrapping it in aluminum foil. Once properly sealed, you can store asparagus as follows:
