Slow Cooker Breakfast Casserole with Ham, Cheese, and Spinach

Crockpot Breakfast Casserole is the star of any breakfast spread. This simple and hearty breakfast dish packed with eggs, hash browns, spinach, ham, and cheddar cheese is all made in the slow cooker so breakfast can be ready and waiting when you wake up. Serve it with some Crispy Breakfast Potatoes or a big fruit salad. We have a slew of house guests coming this month so I have been thinking a lot about breakfast and brunch dishes that I can have for the weekends. However, with two little ones at home and a deep love of a slow morning cup of coffee, I need dishes that take minimal cooking. I would much rather chit chat over coffee then slave away at the stove. So this breakfast casserole that is made in the slow cooker is perfect. Just add everything to the slow cooker for this quick and easy crockpot hash brown casserole the night before and you are golden. Eight hours later breakfast is ready to go. Feel free to mix up the veggies and cheese to make any variety you choose. Person

The Super Bowl is quickly approaching and if you are like me, you are already planning your menu. We are huge Patriots fans around here. I grew up outside of Boston so it's fun to see the hometown boys doing so well. This week I wanted to provide a number of my favorite recipes for parties, entertaining, and in my opinion perfect for the Superbowl. There are more than five I just couldn't hold myself back. As we head into February, I find it's a great time of year to take a look back on how January went. If you are rocking your goals, this is a great time to recognize all the hard work you have done and progress you have made. Not where you hoped? That's ok too! It's never too late to get started. Use that as motivation to start today. Now on to this week's meal plan! It starts out with a delicious Butternut Squash, Spinach, and Sausage Breakfast Casserole, a delicious Spicy Chicken Chili, and Slow Cooker Tuscan Turkey Sloppy Joes. Monday brings Creamy Mushroom and Chicken Pasta and Tuesday is Sesame Chicken with Broccoli. Wednesday brings Beef Fajitas and Thursday is Sheet Pan Lemon Pepper Chicken. To end the week, meals include Tilapia Burgers and Pork Fried Rice. Here are some of the meals in this week's meal plan! Korean Beef Lettuce Wraps

One of my all-time favorite recipes I've ever created on this blog is for these delicious Slow Cooker Korean Beef Tacos . I make them whenever I get the chance and they are often my go-to, make-ahead meal for dinner parties or other gatherings. However, sometimes I just don't have the foresight to get everything into the slow cooker ahead of time and that's how the inspiration for this recipe came to be. Since lettuce wraps are one of my favorite dishes to eat, figuring out an easy way to make a quick weekday meal inspired by the slow cooker Korean beef just made sense. This marinade also works for chicken, pork, or tofu as well so you can mix up the protein to suit your needs. If you do use tofu, remember to press it out ahead of time. If you don't have a tofu press, wrap the tofu in a few paper towels, and set it on a plate with something heavy on top (a cast-iron skillet, perhaps) to properly press and drain it. Otherwise, I find the tofu gets too soggy when cooki

Roasted Brussels sprouts are hands down one of my all-time favorite vegetables. I love them raw in crunchy salads. I love them steamed with a touch of butter. And I especially love roasted Brussels sprouts, cooked until dark brown in the oven with a touch of olive oil, salt, and pepper. They rank up there with these Crispy Balsamic Brussels Sprouts . Usually, I double the recipe when I make these as a side so I have extras for lunches during the week. They made a great addition to sandwiches (Brussels sprout grilled cheese!), pita pizzas, omelets, veggie wraps, salads, quinoa bowls, and more. You can alter this recipe for different calorie counts – cut out the oil or use a cooking spray for an ultra-light version. If you prefer butter to oil, you can make substitute butter for the olive oil. The butter adds richness and makes them a killer side for family get-togethers or potlucks.
