This Crockpot Chicken and Quinoa soup is easy to make, full of flavor, and will keep you full for hours. It's a spin on a traditional chicken noodle soup but made with protein-packed quinoa and vitamin rich kale.  I love hearty soups and I cannot lie (tell me you all remember that song?). In fact, hearty warm soups are my dinner of choice right now, and this soup doesn’t disappoint. Let's be honest, it's rare that homemade soup disappoints ever. But, I am talking about this Chicken Quinoa Soup with Kale in particular. What makes it hearty is all the ingredients I've packed into this one soup. First off, the quinoa adds even more protein to the dish, making it a soup that will fill any eater. Then, I like to use poblano peppers in it as well to give this soup the slightest touch of spice in the background, but you could easily use bell peppers too. These light and tasty chicken and feta stuffed meatballs are packed with garlic, onion, feta, and more and are perfect alone or over pasta or veggie noodles.  It's no secret that I love meatballs. It's so easy to mix up the flavors in meatballs, plus, you can eat them over almost anything: the usual pasta, in a sandwich, over the top of a salad, you name it. The thing that sets these Chicken Feta Meatballs apart is, for one, the salty tanginess of the feta that you get with every bite. That, plus the addition of panko breadcrumbs for a bit of crunch and texture, garlic because it's never not a good idea, a bit of lemon, onion, some parsley, egg, and Italian seasoning...make these once and you'll wonder where they've been all your life! This healthy Beef and Barley Stew tastes like it has been simmering on the stove all day long but is made in under an hour with the help of the Instant Pot. It can also be made in the slow cooker in case you don't have an Instant Pot at home. My family absolutely loves traditional beef stew and it's something I make all the time. The only problem is that it isn't one of my favorite dishes. I don't mind it, but its not something I crave or look forward to eating. Honestly, I am normally more excited about the salad and bread that I usually serve on the side. However, since it is such a staple in our home, I have been looking for an updated version that will make everyone happy and I found that in this Beef and Barley Stew. It's made with a lot of the same ingredients as a traditional beef stew - onions, carrots, celery, potatoes, thyme - but the addition of the barley adds something special. It's hearty, slightly earthy, and adds some much-needed texture. I

Try it with these Blackened Salmon , Blackened Shrimp , or Blackened Chicken Salad . Whenever possible I like to create my own spice blends at home. Not only can it be a great way to save money, but it also lets me control the ingredients so I can adjust them exactly to my liking.
