Creamy Gorgonzola Dressing

Wholesome, easy to make, and bursting with mouth-watering flavors—this Creamy Gorgonzola Dressing is everything you could possibly want in a salad dressing. Made with just a handful of simple ingredients, this dressing is ready in 5 minutes of prep time and is guaranteed to become an instant household favorite. Gorgonzola cheese is a specific type of blue cheese known for its creamy texture and earthy, salty flavor. For this recipe, you could easily swap gorgonzola for blue cheese or any other pungent, semi-soft cheese that you happen to have on hand. Most creamy salad dressings are loaded with fat and calories, which is why I’ve recently begun experimenting with my own healthier versions. Out of all my creations, this Creamy Gorgonzola Dressing is easily my favorite lightened-up swap for the real thing. Rather than loading it up with mayonnaise and artificial ingredients, we use a combination of Greek yogurt and creamy Gorgonzola cheese for the base of this dressing. I love drizz

Jalapeno Cheddar Burger

This Jalapeno Cheddar Burger is seriously good - like I want to eat five burgers good. It's packed with jalapenos, red onion, and cheddar cheese. It's packed full of flavor and tastes like something from a fancy burger place. It's my favorite burger to serve to anyone who claims you can't make a good burger with lean ground meat. It always changes their mind since these burgers are flavorful, moist, and shockingly easy to make. In terms of the burger itself, you can play around with how much spice you like. I usually make it with one fresh deveined jalapeno. It's just a touch spicy and palatable for everyone. Then I top it with some grilled jalapenos to crank up the heat and get it nice and spicy for me. What You'll Need and Easy Swaps Here's everything you will need to make these tasty jalapeno burgers. Lean ground beef: Make these burgers with any type of ground beef you like. Just remember that since these burgers have shredded cheese in the patt

Slow Cooker Kalua Pork with Cabbage

I don’t know about you, but I think Sundays were made for slow-cooker recipes. If you’re looking for a new one to try, you can’t go wrong with this recipe for Kalua Pork with Cabbage. Made simply with pork tenderloin, olive oil, garlic, and cabbage, this tasty dish is packed with bold, smoky flavors that you won’t be able to get enough of. Kalua pork is a traditional Hawaiian dish that typically consists of pork shoulder that is seasoned with salt, wrapped in leaves, and stored underground for 16 hours. However, if you don’t have an entire day to spare, you can instead use your handy dandy slow cooker to get the job done. This slow cooker pork recipe is wildly flavorful and only requires 5 minutes of prep time. No matter what I’ve got going on, I can always spare 5 minutes. All you have to do is rub the pork with olive oil, salt, and liquid smoke, then toss it into the slow cooker and let it do its thing. It couldn’t be easier! Once ready, you will have a delicious and tender pulle

Corn and Bacon Frittata with Jalapeno

This corn and bacon frittata makes the most delicious breakfast, lunch, and dinner. Made with a tasty combination of crisp corn, bacon, red onion, and jalapeno - it is full of flavor in every bite.  It also is great for meal prep since it keeps well in the fridge and tastes great warm or at room temperature.  Do you store things in your freezer, knowing you will find a way to use them someday? That's how this recipe came about. I think at heart I may be a bit of a freezer hoarder. It hasn’t come to a second freezer yet , but I would rather freeze almost anything than throw it away. Lately, I have been on a quest to eat my way through the freezer and after a quick search, I got some inspiration. I had lots of corn and bacon in my freezer and needed to find a way to use it up. This corn and bacon frittata was the perfect solution. You can also make it ahead of time and store the entire thing in your freezer, too!  Key Ingredients and Easy Swaps If you have ever made a frittata

Fresh Fruit and Yogurt Popsicles

If you’re looking for creamy, delicious, and wholesome popsicles you can make at home, look no further than these Fresh Fruit and Yogurt Popsicles. They are made from a base of the fresh fruit of your choice and plain Greek yogurt, a simple yet show-stopping combination that results in homemade popsicles that are sweet, fruity, rich, and creamy. Ever since I started making my own popsicles at home, I’ve been completely hooked. The kids and I have so much fun mixing and matching different types of fruit, yogurts, and sweeteners to make the perfect homemade popsicles. Sometimes we even add toppings like chopped nuts or melted chocolate syrup, like in my Healthy Fudgesicles . One of the things I love most about homemade popsicles is that they are so beyond easy to make. You simply blend up your ingredients like a smoothie, then transfer the mixture to your popsicle molds and pop ‘em in the freezer. The only real work takes you a minute or two, then the freezer finishes the job for you.

Homemade Ranchero Sauce

When it comes to homemade sauces to keep in your back pocket, Ranchero Sauce is an absolute must. Most widely known as the delicious sauce that gives life to the classic Huevos Rancheros dish, this smoky and flavorful condiment is beyond amazing. Ranchero Sauce is a tomato-based sauce with tons of incredible flavor from ingredients like jalapenos, chipotle peppers, lime juice, and fresh cilantro. It’s got a lot of the same ingredients as many salsas, with the key difference being that it’s cooked. This delicious sauce has gained tons of popularity in Mexican and Tex-Mex cuisine , so it’s often paired with a variety of dishes from tacos and taquitos to burrito bowls and even as a dip for chips . I’ve always been an avid believer in a sauce’s ability to take a dish from good to great. However, many store-bought sauces are usually full of artificial sugars, preservatives, and other not-so-great ingredients. The desire to create cleaner alternatives is why I first started experime

Creamy Ricotta Zucchini Noodles

If you are looking for a new way to serve zoodles, these zucchini noodles in a creamy ricotta sauce with fresh lemon and garlic are the perfect dish. Serve them with some yummy Italian Pesto Chicken or Pan Seared Salmon for a delicious, low-carb meal. A few weeks back I shared this creamy ricotta spaghetti squash recipe that we have been eating constantly. It makes such a delicious low-carb side dish since it tastes indulgent, but is surprisingly low in calories. Inspired by that yummy spaghetti squash, I decided to try out another version using zucchini noodles and it came out just as delicious. You can play with the spices to match the main dish and I love adding some red pepper flakes to the oil to make things just a tad spicy. These noodles also make a really great start to making a low-carb pasta dish. All you need to do is add your favorite protein on top and add some extra veggies if you like. For example, these ricotta zoodles would be delicious with some quick garlic sh

Sesame Crusted Tuna

I’m not ashamed to say that this sesame crusted tuna recipe was born out of sheer laziness. One night, I absolutely did not feel like making dinner. I think it’s safe to say we’ve all been there before. Suddenly, I remembered I had a few beautiful ahi tuna steaks in the fridge that I was not about to let go to waste. And thus, this remarkably easy seared tuna dish was born. All you need is some fresh ahi tuna, soy sauce, sesame seeds, and cooking oil to make this mouth-watering dish. Once you’ve got your piping hot skillet ready to go, it only takes a few minutes to sear the fish and then you’re ready to serve. This Sesame Soy Grilled Tuna is also delish. I typically like to pair this dish with a side of steamed rice and veggies, but there are plenty of other ways to enjoy seared ahi tuna. Add it to a salad, make it the star of some fish tacos, or load it into a sushi-style burrito. Next time you’re feeling lazy but still want to enjoy a meal that feels super fancy, this sesame
