Healthy Meal Plans: Week 6

Welcome to this week's meal plan! I couldn't be more excited to welcome all our new members and start another year of easy, healthy eating with our weekly meal plans! This week is packed with easy to prepare, family-friendly recipes that you will love! Now let's talk about the food! This week starts out with one of my family's favorite recipes - Slow Cooker Greek Stuffed Chicken Breast. Monday night brings One Pot Creamy Parmesan Broccoli Pasta. Tuesday brings Roasted Flank Steak with Tomato Basil Salad and Wednesday is an Asian Ground Turkey and Vegetable Stir Fry. To end the week, enjoy Chicken Soft Tacos, Garlic Lemon Salmon, and Pineapple Chicken Sausages. Meal Prep: A little work on Sunday goes a long way to make meals faster during the week. You can prep the quinoa, couscous, and prep all your veggies. Cooking Tip: If Greek flavors won't work for your family, swap in different veggies and cheese. Sweet, nutty, and caramelized Roasted Parsnips will be your new favorite side dish. Ready in less than 30 minutes and easy to season to match any meal, these overlooked veggies will quickly become a favorite. A few weeks back we shared this recipe for Crispy Parsnip Fries and since then parsnips have become a staple in our kitchen. With their innate sweetness, they are a hit with my kids and I love that we are all eating more vegetables. Plus they are easy to find during winter months and make a nice alternative to carrots and potatoes. If you haven't ever tried a parsnip before, it's kind of like a sweeter carrot with some nutty, earthy flavors similar to those found in parsley. This isn't surprising since parsnips are related to both carrots and parsley. They are a root vegetable that looks like a pale, cream colored carrot with a larger, thicker base and can be found year round in most grocery stores. Garlic Lemon Baked Cod

Garlic Lemon Baked Cod made with just 5 ingredients and ready in less than 20 minutes is a delicious way to cook fish and tastes like it was made in a restaurant. Growing up in New England, cod was a fish we ate all the time. My mother typically prepared it topped with seafood stuffing and baked in the oven until flaky and delicious, much like this baked haddock recipe . It was something we ate almost every week and something we all loved. Since moving to the west coast, it's become a lot harder to find fresh cod. Then I discovered frozen wild-caught Atlantic cod (I buy mine at Costco) and it comes out just as delicious without the hunt for fresh cod.  My favorite way to cook cod is in the oven covered with lemon, garlic, parsley, and butter. It's quick enough to make any night of the week and fancy enough for a dinner party. The cod comes out flaky and full of flavor from the lemon, garlic, parsley, and butter. You can serve it with almost anything from roasted vegetables

Picadillo

Picadillo is a traditional Mexican dish that essentially is stewed ground beef with tomatoes, potatoes, and a little or a lot of spice depending on your preferences. It's known as a guisado, which translates to stew, and is a staple in Mexican cooking.   When it comes to making picadillo in our house, I love making mine with lots of spice, adding chipotles and whole jalapenos. But this is one of those dishes that is easy to adjust depending on what you like. You can make it barely spicy and serve chipotle peppers on the side for those that want it or make the base nice and spicy, One of the things I love most about picadillo is that there are so many options for serving it. Sometimes I serve it on its own over some rice or wrapped in warm, corn tortillas for tacos. I almost always make a double or triple batch and use leftovers for stuffed peppers, quesadillas, burritos, and rice bowls. It also freezes great so it's nice to pop an extra serving in the freezer for later.  No

Cabbage Fried Rice

Cabbage rice with all the traditional flavors of Chinese fried rice will be your new favorite healthy side dish. It comes together in less than 20 minutes, is full of veggies, and satisfies any craving for takeout. Personally I love cauliflower rice and especially cauliflower fried rice , but recently after hearing a friend boldly state that she couldn't eat one more bite of cauliflower anything (she has been Paleo for 2 years), I set out to create another veggie version of her favorite fried rice. Putting our heads together we considered carrots, jicama, celeriac, and squash; but finally decided on cabbage since it’s something that is easy to prepare, affordable, and is a constant in Asian recipes. From there we simply threw together the typical fried rice ingredients - soy sauce, sesame oil, green onions, garlic, and ginger to make a delicious side dish. Slow Cooker Salsa Verde Chicken

Salsa verde chicken is probably the first dish I ever made in a slow cooker. It really couldn’t be easier: add a jar of salsa to some boneless, skinless chicken, set the slow cooker to cook, and 4 hours later, you'll have a delicious, healthy meal that tastes better than you could ever imagine a recipe with just two ingredients could taste. However, as these things go, over time I have started to want more from my salsa chicken. So today I wanted to share some quick ways to doctor up this traditional salsa chicken recipe. First, let’s start with the chicken. Although using only boneless, skinless chicken breasts works and has fewer calories, I like a combination of breasts and thighs to keep everything nice and moist. A lean beef roast or pork tenderloin is also delicious. Next is the salsa. Tuesday brings Honey Mustard Chicken and Wednesday is Beef and Broccoli Fried Rice. To end the week, enjoy Garlic Parmesan Shrimp and Zucchini Ground Turkey Pizza Boats. Meal Prep: A little work on Sunday goes a long way to make meals faster during the week. You can prep the roasted vegetables for the pasta, couscous, brown rice, refried beans, and quinoa and prep all your veggies. Korean Chicken Thighs

You seriously can't beat the flavor of this easy Korean Chicken are an easy weeknight meal that will quickly become a family favorite when you are craving Asian take-out. Plus the leftovers are absolutely delicious for lunch the next day when the flavors have even more time to soak into the chicken. For a long time, I have been pretty obsessed with Korean flavors. I love the mix of sweet and spicy flavors and always wondered what the secret sauce was so I could recreate it at home. Turns out one of the secrets of delicious Korean food is a chili paste called gochujang, which is a sweet, spicy, and savory paste made of fermented red chilies, sticky rice, and soybeans. It may sound a little out of your comfort zone, but I promise it's delicious. Plus as Korean flavors become more popular, I am able to find it in my local grocery stores in the Asian section. Potato lovers also won't want to miss these Baked Potato Chips .
